From the ‘Las Clasicas‘ section of the tapas menu at hot new Ibiza restaurant Estado Puro – housed within the Hard Rock Hotel Ibiza – is Spanish celeb chef Paco Roncero‘s twist on the traditional Galician Octopus. While normally, the steamed squid is served atop a bed of steamed potatoes, Roncero prefers to slice it into tender, bite sized morsels on a skewer, served alongside a light and fluffy potato mousse.
Keeping true to their ethos of creating, fresh and healthy food that is as close to the source as possible, Atzaro restaurant La Veranda presents a delicious macrobiotic salad made with fresh root vegetables grown onsite in the garden, wakame seaweed, whole grains and a lush red curry vinaigrette. Light and wholesome – the perfect summer lunch.
BEACHOUSE Ibiza, Playa d’en Bossa’s hottest new beach restaurant brings a slice of Italy to the beach with a menu chock-full of honest, home-style cuisine, showcasing a selection of traditional dishes from a variety of Italian regions. Drawing on fresh flavours and ingredients sourced both locally and imported from the ‘motherland’, head chef Sebastian Nicoletti Altimari brings authenticity to the dish’s heritage and the restaurant’s island location alike.
