Vino & Co Primer Baño del Año – New Year’s Dive 2023 at Las Salinas

From 12pm – Sunday January 01, 2023

Taking the plunge into the chilly sea at Las Salinas on the first day of the new year has long been an Ibiza tradition. Ten years ago, the Hamersma family – the brains behind the popular Vino & Co store in San José – began to host the day as an official event to raise money for charity. Bring your swimsuit and your courage and Vino & Co will look after the rest, with plenty of wine served in biodegradable cups for those who brave the (ever-so-mild) waves. Stop by the Vino & Co store or visit them online in the lead up to the event to buy an event t-shirt, with 50% donated to Proyecto Juntos – an Ibiza based NGO that provides support to hospitalised children and their families. The first swim kicks off at midday followed by further dips at 1pm and 2pm. Participants should bring a plate to share at the communal picnic table and stay behind for a ‘leave no trace’ beach clean. Bring your kids, you grandparents, your dog and your hungover friends for the freshest way to start the new year.

New Year’s Brunch in Jara at The Standard, Ibiza

The emphasis here is on high quality ingredients and international flavours, with the Rawbar & Sushi menu also a favourite with Cotton Beach Club aficionados. New Year’s Day Lunch at Juntos House

The holiday vibe keeps going at Juntos House with their final event for the festive period taking place on New Year’s Day. The sleepy hamlet of San Mateo is the perfect place to nurse a hangover or to bask smugly in sober beauty on the first day of the year. Its picturesque surrounds – if you’re feeling active you could combine lunch with a hike along one of the local trails – provides the ideal backdrop to ease into 2023. The team in the new upstairs bar craft farm-to-glass cocktails and other delicious libations (mulled wine is still on the menu!) while the kitchen serves up dishes created from produce harvested from the restaurant’s farm between 12.30pm until 5pm. Stay on for après-lunch drinks and even though gift-giving season may be over, you can still stop by the boutique to treat yourself to a New Year gift.

New Year’s Day Brunch at Six Senses Ibiza

For those who don’t fancy getting up early for brunch on New Year’s Day, the good people at Six Senses Ibiza have your culinary needs covered. Beginning at 1pm in true Ibiza style, you can start the new year with a breath of fresh Mediterranean air at The Farmers’ Market for the New Year’s Day Brunch for 100€ per person. Start with homemade bread, take your pick from the Detox and Retox Station – with freshly squeezed juices, wellness shots, Bellinis and Bloody Marys – then head to the New Year Culinary Stations for oysters, salads, seafood paella and seasonal farm veggies among others. The main course selections cover all tastes and dietary requirements, from eggs Benedict and quinoa salad to Galician beef tartare, roast suckling pig, creamy mushroom risotto, black truffle caccio peppe and so much more. New Year’s Day Lunch with Live Music at A Mi Manera

Spend the first day of the New Year in the beautiful sunshine in the Ibiza countryside, at beautiful farm-to-table dining oasis A Mi Manera, on the San Juan ‘restaurant road’. Festive Fun Fair at Can Misses

Ibiza’s oldest nightclub has quickly become this winter’s number one nightlife destination and New Year’s Eve looks set to be a roadblock (although technically it’s New Year’s Day as doors open at 12.30am on January 1, 2023). Akasha Ibiza is the historical and community-based club space at Las Dalias in the north of the island and to celebrate the start of 2023, special guest HOSH joins island resident DJs Oriol Calvo and Sena to keep you dancing until dawn. Pre-sale tickets are 25€ online, or 30€ on the door until the club reaches capacity – which is likely to be early, as soon as everyone’s finished their celebratory dinners, they’ll head to the club where the real party’s at!

Elrow New Year’s Day Nowmads at Amnesia Ibiza

For the first time in Ibiza history, there’s a new contender when it comes to major league after parties on New Year’s Day. In 2023, much-loved club brand Elrow bring their sequins, sparkles, feathers, flotation devices, crazy costumes, wacky performers, balloons, flags and glow-sticks to Amnesia Ibiza for a day-to-night extravaganza that will ensure you start the new year on a fun and fabulous note. Just when you thought the party was over, you realised this is Ibiza, and there’s always another party if you just know where to look! The island’s number one after party crew, Keep On Dancing, head back to the golden sands of Bora Bora (yes, the very same Bora Bora that threw a ‘final dance’ party at the end of the season – c’est la vie!) on the beach at Playa d’en Bossa for the next instalment in their famed Día Dos parties on Monday January 02, 2023. Set in a beautifully restored ancient finca on the iconic San Juan ‘restaurant road’, A Mi Manera is a magical place to see in the new year. The charming venue begins its NYE celebrations on Saturday evening with a four-course set Mediterranean menu with an Italian family influence for 150€ per person (excluding drinks). The decadent dinner begins with an impressive selection of seasonal starters – think mini-Wagyu tartare with quail egg, smoked artichoke carpaccio and pumpkin flan among others – followed by festive first courses such as fusilloni with monkfish, or Champagne risotto with caviar and truffles. Cas Gasi Restaurant is truly something special throughout the festive season. Gather your loved ones and head to the heart of the Santa Gertrudiscountryside for New Year’s Eve, where you’ll be welcomed as if you were family, before being seated in the beautifully decorated dining room to enjoy a specially designed menu for 180€ per person (excluding drinks). You’ll be welcomed with Guillemaud oysters and kimchi croquettes, then sit down to a selection of hot and cold starters including foie mi-cuit with green apple, goat cheese and homemade quince; Iberian ham with crispy bread, or seafood bisque with a touch of Pernod among others. With parties popping up all over town, Vara de Rey looks like the place to be to kick off the 2023 New Year celebrations and the team at La Cava have devised a very special set menu for the occasion that’s 100€ excluding drinks or 125€ with a selection of wines, beer and soft drinks until midnight. Start with an innovative appetiser that fuses croquettes with Spanish calçots in romescu sauce, followed by your choice of Thai scallop salad, baby veggies cooked in the Josper oven or duck cannelloni with foie, mushrooms and pear. For mains, choose between the veal terrine with potato puff pastry, the Galician turbot in albariño sauce or the mushroom risotto with pumpkin cream, and for dessert, the creamy white chocolate and with red fruit micro-sponge cake with a crunchy pistachio base is the perfect sweet treat. At midnight, diners will be given 12 lucky grapes to coincide with the clock striking midnight and the dawn of a new year!

New Year’s Eve Menu at La Torre Ibiza

As we bid farewell to the old year and welcome the new, La Torre Ibiza invites you to spend the evening on their heated terrace, starting with the iconic Ibiza sunset and then indulging in a festive set menu created for the occasion. Start with aperitivos such as of shellfish soup with basil oil and a ‘liquid croqueta’ of jamón bellota and panko followed by entrees like grilled leek with citrus and crispy kimchi or langoustine gratin with smoked aioli. Main courses are a choice of veal cheek with warm parmesan foam and fried rocket or sea bass with spinach carbonara and Basque sofrito. Finally, dessert is a sweet futomaki filled with rice pudding, dulce de leche and vanilla ice cream. Priced at 135€ per person, the menu (with a vegetarian option available) includes wine and 12 lucky grapes at midnight, ready to pop with each chime of the clock as it hits 12, as is tradition. At this time of year all focus turns to the new year: setting new intentions, celebrating and making even more magical memoriesand Six Senses Ibiza is hosting a laid-back New Year’s Eve Dinner at The Farmers’ Market to mark the occasion. Tickets are 280€ per person (including sommelier selected wines) and starts with Pata Negra acorn-fed ham and Melanosprum truffle, plus Guillardeau No2 oysters in vintage cava and red fruits. The undisputed king of the San Juan restaurant road, Bambuddha has been known as an iconic summer dining destination for the past 20 years, but this winter, to the island resident’s immense pleasure, the legendary MediterrAsian temple continues serving up its signature cuisine until the end of the year. Open weekly from Wednesdays till Sundays from 7pm, island residents receive a 20% discount once you’ve sign up for their Resident Members card. On Wednesdays, it’s all about the six-course Chef’s Special for just 45€ per person, whilst Sundays play host to The Infamous Bambuddha Buffet, an all-you-can-eat feast featuring all the restaurant’s classic dishes plus some new favourites for only 35€ per person. On other nights of the week, the à la carte menu covers all your dining desires, drawing on only the finest ingredients and a healthy amount of local produce. Bambuddha is also open on Christmas and New Year’s Eve – reservations highly recommended so you can celebrate in style.

Wild Beets, Santa Gertrudis, Centre

For fad-free raw, plant-based and vegan cuisine, botanical eatery Wild Beets, in the centre of Santa Gertrudis village, covers all the bases. A popular destination for healthy eaters in the north of the island, it’s often said that you can tell when winter has arrived in Ibiza because the stylish floating fireplace is re-installed to replace the fans in the light-filled restaurant interior. The extensive menu features carefully calibrated dishes combining fresh, local and seasonal produce with nature’s healthiest ingredients, so whether popping in for a quick juice and a tofu scramble, a coffee and raw Beetroot ravioli, or settling in for a long leisurely lunch over a quinoa and hempseed Protein bowl, there is something tasty for every occasion. The first international outpost of the acclaimed NYC restaurant brand by Donna Lennard, the Bottega Il Buco team host buzzing aperitivo sessions from Monday to Saturday throughout the winter from 5pm until 7pm, giving guests the chance to sample some of their signature ancient grain focaccia with its endless variety of toppings, along with delicious wines and bespoke cocktails. On sunny winter days, the terrace is a gorgeous spot to linger, whilst in the evenings the snug interior makes a great place to meet friends, or settle in for an early supper. The menu is inspired by local produce and ingredients, along with some hard-to-find Italian delights, which can also be bought from the store itself should you wish to recreate the Bottega Il Buco magic at home. La Escollera, Es Cavallet, South West

For a winter lunchtime destination with wow factor, famed island restaurant La Escollera on the rugged and deserted Es Cavallet beach is hard to beat. Often crowded with tourists in summer, as soon as October hits, this stunning unspoiled beach in the heart of the Las Salinas nature reserve is transformed into a natural paradise, enticing island residents out of their winter hibernation. The sunny and expansive La Escollera terraces boast views across the waves to Formentera and the iconic Dalt Vila, making it a stunning spot for lunch. Don’t be surprised to find the alfresco spaces full if you turn up on a sunny day without a reservation, but there’s also a huge interior, boasting those same views – also ideal for days where it’s a little chilly outside. The traditional Mediterranean menu has been passed down through generations of the owners’ family, but in recent year’s it’s also been tweaked to include some creative vegan options. La Chickeria, Santa Gertrudis, Centre

If the thought of spit-roasted chicken or ribs makes your mouth water this winter, then look no further than La Chickeria in Santa Gertrudis – open all year round from 12.30pm until midnight. Recently opened this summer – you’ll find it next to the Spar supermarket on the main road through the village – this is the fifth eatery, from the Dutch Van’t Spit group, who have a chain of these family-friendly concept restaurants in Holland. Focusing on antibiotic-free chooks grown naturally and free-range, the 100% plant-fed chicken is then expertly roasted by ‘Spitmaster’ chefs on Spanish charcoal, using custom-made grills for that perfect smoky yet juicy barbecue flavour complete with crispy skin (everyone’s favourite part). Homemade sides of chips, corn, salads and sauces complement the package, and the whole shebang is also available for takeaway if you don’t mind the wait. With a buzzing front terrace, a cosy interior and a secret garden in the back, there’s always space for your get-togethers, catch-ups or date nights. Ve Café, Santa Eulalia, East

When looking for a winter dining spot to settle down for a while, to catch up on some remote work, to host a meeting or just to go over the dally gossip with a friend, make a beeline for the all-new Ve Café, adjacent to W Hotel on frontline of the southern end of the promenade in Santa Eulalia. The bright and colourful seafront terrace is ideal for basking in the winter sun or keeping an eye on the kids playing on the beach, and the stylish interior features free high speed WiFi and handy power sockets for your laptop or phone – ideal for travellers and corporate nomads alike. The 100% plant-based kitchen menu offers tasty winter warmers, like sweet potato soup or roasted vegetables with tahini and lemon, alongside the restaurant’s signature staples of Buddha bowls and hummus bowls, all made with locally sourced produce and organic ingredients. Of course with so much good healthy stuff in the main courses, it’d be a sin not to linger for dessert – these indulgent delights are definitely worth saving room for. Passion Café, Marina Ibiza and Santa Eulalia

Healthy eating isn’t just for summer, so if you find yourself craving some serious goodness and food that sustains, make Passion Café your year-round restaurant of choice. Two of the brand’s six locations, Passion Marina and Passion Santa Eulalia remain all winter, from 9am until 5pm daily, with a fresh and hearty winter menu perfect for filling breakfasts, brunches or warming lunches. From Buddha bowls, black bean burritos and Beyond Burgers, to avocado fries and delicious dahls, the vegan and vegetarian options are second to none, although there’s also something on the menu to satisfy the carnivores in your group too. Chicken, salmon, hearty curries, deluxe burgers, steaming hot soups, keto-friendly dishes – the options are almost endless. With the island’s most extensive and creative drinks menu (from ‘trendy’ lattes and health-boosting shots to smoothies, juices and more), plus desserts that are the icing on the cake (pardon the pun), it would be easy to spend the entire day here. Both restaurants are blessed with enormous sunny terraces, so even if you might be a wearing a scarf, it’s still possible to pretend it’s summer as you sip your super greens!

Project Social, Santa Eulalia, East

When it comes to the art of a really great burger, beef, chicken, vegan or otherwise, Project Social in Santa Eulalia has pretty much reached perfection. The extensive range of toppings and fillings may take a while to sample (all the more reason to visit!), but once you’ve found your favourite, you’ll be back, like so many others in this part of the island. In winter, the friendly vibe and regular faces makes this a vibey destination whatever the time of day, and the many special offers keep Project Social affordable for locals too. From Monday to Friday, the Breakfast Club includes a coffee and a juice for 10€, with a menu packed full of everyone’s favourite morning dishes (think pancakes, avo toasts, acai bowls, full English and veggie brekkies), while the 11€ Lunch Menu features burgers, ribs or hearty salads with a choice of drinks. Everyone’s favourite Fish & Chip Fridays, and traditional Sunday Roasts with all the trimmings on the weekend give you even more reasons to spend time here, and did we mention Backgammon Club, Tequila Thursday and the nightly Hours of Happiness?

Can Mimosa, Santa Gertrudis, Centre

A good lunch in Spain always involves a menu del día, and tucked away on an unassuming side street in the village of Santa Gertrudis, you’ll find one of the island’s best at Can Mimosa.  The 200-year-old converted farmhouse has a lovely sunny courtyard perfect for whiling away the lunchtime hours, and the weekly changing menu makes the most of locally sourced seasonal produce, including ingredients plucked straight from the restaurant’s own vegetable allotment right outside the kitchen door.  A choice of three courses costs just 17.50€ and includes plenty of vegetarian or vegan options. Time-honoured dishes like chickpea broth and endive salads are served with baked dorada or vegetable cous-cous, with classic such as apple crumble or crema Catalana for desserts. Sundays in the garden are all about traditional Sunday Roasts (reportedly the very best on the island), served with Bloody Marys and a side of live music for a truly sociable way to enjoy the weekend. A New Year’s Eve feast is also in the works – the perfect place to fuel up before heading out to party.

The heart of Ibiza’s culinary future

The Sabina Clubhouse opens to a curvaceous bar suffused by sunrays streaming down from an enormous light well. To the left is a lounge area lined with pale bookshelves, to the right a lush courtyard and outdoor lounge. Behind the agate green bar stools stretches a glistening swimming pool, surrounded by open corridors covered in pergolas heavy with greenery. Within this space, Sabina’s signature restaurant feels like stepping back into an era that never really existed, or perhaps into a dream of the future.

Either way, it’s the most exciting culinary experience to hit the island in decades. The refined casualness that imbues the space pinpoints exactly what Ibiza was missing. It’s graceful and lavish yet with an understated ambience that immediately transmits comfort and ease. Despite the cultured style, there’s not a single ounce of conceit. Amit Segev and Mouji Longhi – of La Paloma fame – bring their signature sense of elegant cool to Sabina via the skilled hands of their friend and chef Shahar Tamir, whose food reflects this philosophy by playing with flavours and combinations, stirring the palate but never overpowering the senses.

Israeli-born Shahar entered culinary school in Tel Aviv at the tender age of 14. “I loved it straight away,” he says. “I knew that’s what I wanted to do and what I would always do.” After nearly a decade of travelling the world and working in far-flung places such as Australia, India and Asia, Tamir was convinced by a colleague to come and work in Ibiza in 2014. “I thought to myself ‘Ibiza? What would I want to go there for?’ And then, I arrived.” He quickly realised the island offered a plethora of flavourful adventures, in addition to the tranquil life he’d been seeking. During breaks from his job as a sous chef, Shahar would spend time in the relaxed environs of La Paloma where he became friends with Amit and Mouji. “He’s very awake,” Amit says of Shahar. “He’s very bright and passionate. We did some pop-ups together but we had to wait for the right time for the path to manifest.”

The path turned out to be Sabina’s restaurant. And manifest it did. Anton Bilton, Sabina’s developer and visionary, is a long-time friend of Amit and Mouji. Slowly the pieces started to come together. “When Amit told me about Sabina, it was a big step for me,” says Shahar. “But I was more than ready.” With a highly tuned palate and a complex culinary imagination, Shahar has captured the essence of the Sabina vision. “I love his ability to take the classic and give it a twist, and then take the twist and give it some class,” enthuses Amit. “With this project, we can support his potential and he can take it in so many different directions.”

Stints at Noma in Copenhagen introduced Shahar to techniques, ideas and methodologies that inform his culinary philosophy. “After a lot of research, I discovered local Ibiza recipes that go back thousands of years,” he says “I want to respect the ancient food traditions here and match them with other traditions.” Time spent in the Fermentation Lab at Noma ignited a passion for preserves and ferments, which were once a regular part of the local diet. The Sabina restaurant kitchen makes all its own vinegars, several types of kombucha, as well as soy and miso made from local grains.

Shahar sees infinite flavour combinations within the abundance and quality of homegrown produce, and fully intends to explore the endless possibilities presented to him. The menu at Sabina is guided by the seasons, changing up to five times over the course of a year. Lunch is scattered with the DNA of La Paloma. The fresh, casual and utterly delicious dishes range from homemade sourdough pizzas dressed with seasonal toppings or luscious salad bowls overflowing with local produce to more substantial options. This is where Shahar will incorporate the flavours from his travels, his original homeland and his adopted homeland of Ibiza, with a trace of the inventive such as freshly baked breads made with jau flour and distilled seawater from Formentera.

Dinner is where the Sabina restaurant style recedes from the breezy daytime vibe to a gentle sophistication. Adhering faithfully to the season, dishes may include delights such as truffle focaccia topped with local white figs and delicate lavender fronds or a remarkable take on tabbouleh, replacing the standard bulgur with grains of purple cauliflower, grapefruit, hazelnut, local yoghurt and at least three types of oregano. It’s a surprise on the palate – tangy with undertones of sweetness and the peppery aroma of the oregano all tempered by the creaminess of the yoghurt. The Thousand-Year Potato is an extrapolation of an ancient dish Shahar discovered in his research. The prized Ibiza potato is cured in local seaweed for three months and layered with thin slices of cured wild sea bass. Sitting in a bath of buttermilk, wild herbs and seaweed oil, it’s inconceivably sublime.

Mains appear like works of art in bright colours with flavours to match. Line-caught sea bass is gently grilled and veiled with pumpkin and poppy seed leather alongside mushrooms and a semi-sweet pumpkin pureé. When Shahar first tasted the local plums, he knew he would be combining them in a multitude of dishes. Slow-cooked local lamb neck is rolled with porcini mushrooms and pistachio before being soused in a homemade umeboshi and plum reduction, and served with a perfectly salted pile of toasted kale. Sweet, sour, tender and crispy, the combination is heavenly and the dish is no doubt set to become a Sabina staple.

Beyond the kitchen magic, Sabina is dedicated to using local produce, working directly with farmers and also foragers, often taking off into the Ibiza countryside themselves to seek out the abundance of wild food. Sustainability is a key foundation for the whole development and Shahar directs his suppliers to forgo plastics at every opportunity. “We work with as little plastic as possible,” he explains. “Everything in the kitchen has a by-product. All of our waste oil is turned into biofuels and we separate our compost into four components to make it more effective. We really want to do good for the island and this is one of the ways we can contribute.” And this is certainly not the only way Sabina Restaurant will contribute to island culture – through their innovative menus and eclectic events, this beautiful space will soon become the island’s beating heart.
