The most exciting addition to the hotel’s gastronomic offering this year is the launch of Michelin starred chef Dani Garcia’s BiBo Ibiza Bay restaurant. The sixth of his BiBo concepts, the Ibiza outpost has a focus on Mexican street food presented in ways you’ve never seen before. Sea bass tacos, Chilorio pork burritos, red shrimp aguachile and guacamole prepared fresh at the table are just some of the delectable morsels on offer alongside Garcia’s signature dishes. Designed for sharing, be sure to pair your meal with one (or more) of the specially crafted cocktails.

Breakfast at Chambao is as legendary as ever, and this shoes-optional eatery still serves up the finest Mediterranean influenced lunches overlooking the sea. Family Saturdays are hosted at Chambao and include live music by Cuban band Kandela Mi Son, plus easy access to the kids’ club. The all-new Sunday Brunch begins at midday and runs for four hours of pure indulgence, starting with a complimentary glass of champagne accompanied by a soundtrack from the island’s best DJs, for 95€ per person. Days segue seamlessly into the NOBU aperitivo hour, from 7pm with light bites, shared plates and cocktails all prepared with that signature NOBU touch. Dinner under the golden lights of NOBU is always exceptional, and it’s made even more special during the full moon every month. As the pearly orb rises from the glittering sea before your eyes, feast on a curated menu of delicacies created by executive chef Giacomo Notarbotolo.
