Tsuma Ibiza

An unsuspecting residential location skirting the cusp of the island’s capital has got the island’s foodie community buzzing thanks to stylish new Ibiza restaurant Tsuma Ibiza serving up the finest sushi, sashimi and sake this side of Tokyo.

Discovering a clandestine dining destination on the white isle is rare these days, but occasionally, a hidden gem can surprise even the most in-the-know foodie. Take Tsuma Ibiza, on the cusp of Ibiza town, for example. Created from the ground up by Polish power couple Magdalena Kasprzyk and Piotr Perzynski, every element with the Ibiza fine dining restaurant has been calibrated to their high standards, from the custom-built wooden bar and Tokyo-chic interiors to the incredible ingredients and exceptional service.

From the moment you step inside Tsuma Ibiza, there’s a noticeable cultural shift. Drama comes courtesy of floor-to-ceiling green velvet drapes and matching chairs; glamour is evident in the way polished glass glistens beneath precision lighting; ancient tradition is practiced behind the elegantly illuminated bar. Piotr, an acclaimed sushi chef who went through rigorous training processes with some of the best Japanese chefs in the world, is the fine dining mastermind behind the cuisine at Tsuma Ibiza.

An unwavering dedication to his craft is at the heart of each skilfully sliced and diced piece of sushi Piotr presents to diners. It’s also visible in the array of ultra-fine carpaccio; it’s obvious with every bump, shot or tin of Antonius Caviar served; and it’s evident in every soup, salad, tempura and donburi. Quality, timing and temperature is everything at Tsuma Ibiza. Every second counts – with the expert preparation of sushi rice, in the way fresh Mediterranean fish and seafood, caviar and Japanese Wagyu are stored, and the methods used to create each dish.

Tease your palate with fine dining appetisers such as lean tuna marinated in Gorgonzola soy and topped with Parmigiano Reggiano, chives and kizami nori that boasts umami in spades. Share the red prawn carpaccio with tosazu jelly and Siberian Antonius Caviar, or opt for the grouper, topped with fresh Italian truffles, aonori tenkasu and yuzu tosazu dressing. There are classics Tsuma Ibiza too – think miso soup; wakame, gomae or deep-fried softshell crab salads; tempura shrimp or veggies; homemade gyoza; and mouth-watering Wagyu served atop toasted homemade Shokupan.

The star of the Tsuma Ibiza show is without a doubt sushi, and while there is an extensive selection to choose from – from made-to-order hand rolls to nigiri and sashimi served by the piece – nothing beats ordering omakase for Piotr’s personal recommendation, topped with creative, flavour-filled toppings. Complementary to the entire Ibiza fine dining experience is a selection of sake curated by Magdalena – a highly decorated sake sommelier who takes you on an immersive flavour journey throughout the evening.

Tsuma Ibiza is Ibiza fine dining at its very best, and yet the vibe is always laidback with the sounds of vintage vinyl floating across the airwaves and a light-hearted ambience – everyone is welcome here. Open all year round, and also offering private catering service for special events, weddings and villas, plus exclusive distribution of Antonius Caviar in the Balearics, Magdalena and Piotr have set the bar high in their first year – Tsuma Ibiza is clearly a star on the rise.
