For an authentic taste of Ibiza, island oenophiles should plan a visit the Ojo De Ibiza Bodega, set in the sun-dappled hills of San Mateo in the far north of the island, on Thursdays and Fridays between 10 and 6pm, or on Saturdays between 10am and 2pm when the family-run company offers private wine tasting experiences. Make an appointment with one of the expert team members, who’ll take you on a tour of the production lab and talk you through the artisanal winemaking process, before sitting down to try each of the unique drops, which includes two distinctly different reds, a white and a rosé, all with very limited production runs and made using organic viticulture techniques.
