Culinary stars collide in Ibiza

It’s no longer a secret that winter in Ibiza is one of the most wondrous times to be on the island – just scroll through Instagram for proof of the glorious sunny weather, blissfully quiet beaches, cosmopolitan community, magical sunsets and more. When night falls however, those seeking high-level dining experiences and a social buzz need to know where to look and this winter, downtown darling Noja by Cotton Food Lab is the place to be. In January and February, the intimate and chic Japanese-Nordic restaurant teams up with celebrated chef Boris Buono and Ibiza Food Studio for the culinary collaboration of the year – and yes, we know the year has only just begun!

Like all the best meet-cutes, the Noja and Ibiza Food Studio relationship began with a random phone call. Buono, having shuttered his Sa Penya bolthole for winter renovations, was looking for a short-term space to set up shop. “I hate having to close for renovations,” he says. “So many of my faithful customers are year-round island people and I want to have something to offer them.” As he drove through the back streets of Ibiza town just a few weeks ago, he noticed a closed sign on the big wooden doors of Noja and gave Cotton Lifestyle Group impresario and Noja mastermind, Christian Marstrander, a spontaneous call to propose that Ibiza Food Studio move into the location for winter. Ever the creative thinker, Marstrander took the idea next level with a nonchalant: “Why don’t we just do a collab?”

Revered chef Boris Buono will be both hosting and cooking alongside the Ibiza Food Studio chefs and Noja sushi masters – a first in Ibiza’s culinary scene.

Over coffee, the duo nutted out the details and a new gastronomic alliance was born. Marstrander sees it as a happy accident that was probably meant to be. “We are both heavy foodies and both Scandi – I’m from Norway and Boris is from Denmark. We’re both year-round Ibiza residents and while we’ve visited each other’s places, we have never worked together.” The pair share a vision of service and quality, always striving to create – not just dishes but overall experiences for their clients. “There’s not a lot happening in Ibiza in winter,” says Marstrander. “This is something out of the ordinary, something very special we can offer during the quietest time of the year.” Plans came together very quickly and on Thursday January 12, 2023, Noja featuring Ibiza Food Studio opens its doors at 5pm for the opening night of its two-month run.

The dining experience features the new Noja á la carte menu and its omakase( chef’s choice) offering, with highly trained sushi masters slicing and dicing to order. Concurrently, the Ibiza Food Studio team – led by head chef Arno Hendriks – have crafted a bespoke menu that highlights quality local produce in their signature style. The Japanese-Nordic delights of Noja include minimalist red prawn makis, lush beetroot-marinated salmon nigiri, tuna toro or hamachi sashimi, plus blinis with caviar and Norwegian lompe alongside delectable sashimi tartars – a must-try for sushi lovers. Alternatively, diners can tuck into grilled calçots with chimichurri, Formentera langoustine ravioli, Terra Viva Ibiza organic chicken (the first island-produced, certified organic meat), line-caught fish of the day and creative vegetarian options courtesy of Ibiza Food Studio, with the option to add caviar or truffle to most dishes.

Noja and Ibiza Food Studio have reputations for fusing the highest quality ingredients with precision techniques and exceptional service – now, the two combine for something truly out of the ordinary.

As Marstrander attends to the growing Cotton Lifestyle Group empire across Europe over the winter, Buono will step up as host. “Boris will have a front-of-house role, he’s very open and definitely a big part of the experience,” explains Marstrander. Buono relishes the contact he has with his diners and the petite space at Noja is analogous to the Ibiza Food Studio vibe. “I’ll be there hosting and cooking too with the omakase team,” he says. “I’m looking forward to being part of the show.” Marstrander readily admits that this new concept is somewhat improvised and that people should be ready to enjoy the evening, Ibiza style. “It’s an experiment,” he says. “Something fun for everyone in winter.”

As well as his cheerful disposition and obsession with excellence, Buono is also bringing along a selection of the eclectic and extensive wine collection from Ibiza Food Studio – think small batch natural wines with eccentric back stories, classic drops from conventional vineyards and lots of bubbles – so diners can mix and match with the outstanding sake and wine available at Noja. “Boris is really into Champagnes and sparkling wines, so he’ll have a lot of interesting options,” says Marstrander. Enthusiastically expanding on the theme, Buono is excited to introduce diners to les champagnes de vigneron, sparkling drops of goodness made outside of the commercial realm by vintners dedicated to the delicate cultivation and production of champagne sans the demands of multinational marketing.

The intimate space seats just 24 diners at any one time and this exclusive collaboration runs only until the end of February so reservations are essential.

Both Marstrander and Buono see their partnership as a way to give something back to the island in the off-season – giving islanders a chance to get together with friends, dress up a little and enjoy high-level gastronomy even on the darkest nights of winter. But with this calibre of food, service and style – Buono has a history in fine dining including a stint the revered Noma in Copenhagen and Marstrander has helmed his own successful hospitality brand for over a decade – the Noja featuring Ibiza Food Studio pop-up is also a great reason to plan a trip to Ibiza. Whether you’re local and popping in for a convivial après-work aperitivo (the restaurant opens its doors at 5pm from Wednesdays to Sundays), planning a luxe dinner with friends or flying in especially for the occasion, bookings are strongly advised as seats are limited to just 24 diners and will be in hot demand.

The Japanese phrase omakase (お任せ) has become somewhat of a buzzword on the international sushi scene in recent years, as discerning diners have come to understand that loosely translated it means ‘I’ll leave it up to you’ – that is, chef’s choice. Much more than just a culinary trend however, omakase allows sushi chefs to be innovative and creative, to work with the freshest and finest ingredients available on a day by day (and indeed, hour by hour) basis, and to interact with diners as they proudly present their creations piece by piece over the course of an evening. Here in Ibiza, the all-new Cotton Sushi Lab is an omakase-only experience – the first of its kind on the island.

The philosophy behind Cotton Sushi Lab is simple. Only the finest fish and seafood – wild where possible – is sustainably sourced and the produce is allowed to speak for itself. All the produce that comes into the kitchen must comply with the restaurant’s high standards and environmentally friendly ethos. Fresh wasabi is grated at the table, ginger is pickled in-house and the soy sauce is completely homemade. Short-grain rice is prepared and vinegared specifically for each table and each piece of fish is carefully selected and stored according to traditional Japanese customs, wrapped in three different types of paper to prevent drying, maximise flavour and preserve texture – sliced just before serving to maximise flavour and texture alike.

There are just 24 seats within the warm embrace of Cotton Sushi Lab, and only two sittings – with strictly observed reservation times – per night. Wasabi is grated fresh from the root and soy and other sauces are made in-house according to ancient, traditional recipes. Sushi came of age in the Edo era, between 1603 and 1868, when Japan’s isolationist foreign policy allowed this culinary phenomenon to develop without any outside influences. While other cultures eat raw fish, sushi is quintessentially Japanese. Even then it was considered a simple, fast and delicious snack yet unlike the fast-food sushi of today, sellers in the Edo period had to retain a high level of quality to keep their reputations. It explains a lot about the philosophy behind the restaurant and its quest to be a cut above the rest. In it, the octogenarian and reluctant Michelin-starred chef Jiro Ono says: “I do the same thing over and over, improving bit by bit. There is always a yearning to achieve more. I’ll continue to climb, trying to reach the top, but no one knows where the top is.” While no one knows where the top is, there is no doubt that Cotton Sushi Lab is climbing towards it at a great pace. ‘New normality’ equals more Ibiza beach dining

As the island eases into its 2020 summer season, the gastronomy scene is also opening up, with many Ibiza beach restaurants applying a slowly, slowly approach to ensure the absolute safety of their guests. Some were keen to open to residents in the previous ‘Phases’ of our de-escalation plan to come out of lockdown while others have been hedging their bets on when they’ll be able to guarantee their customers the authentic Ibiza experience they’ve come to know and love. In addition to the restaurants we shared in last week’s guide to beach dining, now most of our favourite restaurants have announced their plans to re-open in the coming weeks and some have even opened earlier than planned due to popular demand. So without any further ado, below is a comprehensive guide to opening dates and places to dine with your feet in the sand this summer in Ibiza.

Beachouse Ibiza, Playa d’en Bossa, South East

There’s going to be an all-new energy in Playa d’en Bossa this season without the buzz of the major clubs, however this could be seen as a refreshing change that brings a new type of tourism to one of Ibiza’s most stunning stretches of sand. The atmosphere will be one of laid-back luxury – long days on the beach, luxurious lunches, family friendly places to eat and enjoy – and Beachouse Ibiza will be at the very top of the must-visit list for all of the above. The Ibiza beach restaurant re-opened last weekend and offers something for everyone from 10.30am to 8pm daily. Morning yoga classes on the sand that raise money for ‘Save the Med’ charity, divine breakfasts with a view, luxe lunches, a super cool kids’ club, plus a music program from Thursday to Sunday featuring some of the island’s finest resident DJs – it might be a different Bossa to years gone by, but that doesn’t mean Ibiza’s musical heritage will be lost!

Pura Vida, Playa Niu Blau, East

The beach of Playa Niu Blau is still somewhat of an island secret. It’s a place where you can always find a place to soak up the sun, there’s no trouble parking and the shallow waters are ideal for kids. Completing the perfect beach holiday package is stylish seaside eatery Pura Vida Beach Restaurant – a stunning and stylish place to take respite from the sun for lunch, to spend a whole lazy day on the sun loungers or enjoy sundown cocktails and snacks on the terrace. Open from Tuesday to Sunday from 11am to 8pm (kitchen from 1pm to 8pm), the gorgeous frontline restaurant offers a special weekday menu for just 19€ per person, in addition to its classic Mediterranean à la carte menu and seafood specialties. Every Saturday, there’s kids’ entertainment, so parents can enjoy a luxe beach day safe in the knowledge their little ones are in good hands. Reservations highly recommended.

Aiyanna Ibiza, Cala Nova, East

There’s just one more sleep until islanders and holidaymakers can dine beneath Ibiza’s most colourful and insta-friendly umbrellas at Aiyanna Ibiza. The stunning Cala Nova beach restaurant reopens on Friday June 26, 2020, after its extended winter hibernation, from 10am until 8pm – with the kitchen open until 6pm. A new cocktail menu, the delicious modern Eastern Mediterranean influenced menu, fresh juices (with a selection available to take-away in environmentally friendly containers), boho-chic and relaxing décor, and those amazing views over the rustic shores of Cala Nova beach make it one of Ibiza’s most in-demand beach restaurants, so advanced booking is now highly recommended due to the limited new capacity.

Atzaró Chiringuito, Cala Nova, East

Cala Nova is one of Ibiza’s most rustic, unspoiled beaches and set within the sand dunes, in pride of place at the centre of the north-eastern beach, is Atzaró Chiringuito – the little sister beach shack to the famed Atzaró Beach restaurant, set higher up on the cliff. Atzaró Chiringuito will open to the public on Wednesday July 1, 2020 (with big sister restaurant due to announce its opening date soon) in line with all the new health and safety regulations we’re getting used to with the ‘new normality’. Open daily from 10am to 6pm, it’s the perfect place for delicious breakfasts, laid-back lunches, fresh juices, healthy salads, and refreshing cocktails – the authentic Ibiza beach life experience, with stunning view of the Mediterranean as your backdrop

Los Enamorados, Portinatx, North West

We’ll admit that Los Enamorados is not technically a beach restaurant, however the way it juts out over the Mediterranean Sea in Portinatx, its incredible island views and the fact that it’s just a mere three-minute walk to the beach gives it enough credence to be included in this list!
