Drawing on the signature design principles of the world’s classiest motorboats and combining them with the breath-taking views and unique ambience of 7Pines Resort Ibiza, part of Destination by Hyatt, the result is the slickest Ibiza restaurant and bar on the west coast.

Step up onto the teak-wooden flooring – an unmistakeable nod to timeless nautical style – of Pershing Yacht Terrace, where you’ll sail seamlessly through the flavours of Asia and the Mediterranean via cocktails and cuisine alike. The iconic Pershing 9X Yacht inspired the aerodynamic shape of the bar that presides over the Ibiza restaurant, giving diners the feeling of being on a voyage while gazing out at the Mediterranean horizon and Es Vedrá rising dramatically from the water.

All of the finest journeys start with a celebratory toast, and at Pershing Yacht Terrace, it’s no different. The cocktail menu is an immersive experience – inspired by points of the compass and prominent flavour profiles. Each exquisitely presented concoction comes with a QR code that invites you to dive into the diverse history, stories and culture of Ibiza. Of course, you can also choose to simply sit back, sip and savour classics, top-shelf spirits and exceptional drops from the 7Pines Resort Ibiza wine cellar at your leisure. Salut!

The Asian-influenced modern cuisine at Pershing Yacht Terrace is served izakaya-style from 7pm nightly in high season. Starters include a zesty green papaya salad; sliced sea bass ceviche with spiced coconut milk and avocado; sweet soft shell crab with chilli cream; and plump beef dumplings with spicy mayo. Mains range from glazed Spanish pork belly with sweet chilli dip; and classic Hoisin duck to luxurious lobster with a traditional Singaporean sauce. Don’t miss the Ibiza restaurant‘s moorish mochi selection for dessert – the perfect end to the perfect night.

This season, Pershing Yacht Terrace welcomes visitors and guests to take part in a tailored Cocktail Master Class inspired by the flavours and history of Ibiza. These hands-on sessions – taking place in the Ibiza restaurant and available via pre-booking only – are where the experienced in-house bartenders teach you the tips, tricks and traditions of their trade, meaning you can take home a timeless skill as a souvenir.

Pershing Yacht Terrace also invites mixologists from some of Spain’s most revered bars step into the yacht-inspired Ibiza restaurant as part of a three-part Bartender Series dubbed Sip & Explore. June 1 and 2 sees Barcelona’s award-winning bar Dr. Stravinsky kickstart the series, followed by the acclaimed Río Grande on June 18 and 19. Madrid’s highly-ranked Dry Bar wraps the event up on September 3 and 4. Each bar will curate a special cocktail list, host masterclasses and tastings – truly unmissable experiences.
