There’s no doubt the island of Ibiza is fast becoming one of the world’s must-visit foodie hotspots and destinations like 1742 Ibiza are making the world’s culinary critics sit up and take note. Offering a unique combination of beguiling experience, incredible gastronomy and impeccable service, this Ibiza fine dining restaurant from the Nassau Group is a one-of-a-kind extravaganza. Housed within an ancient palacio adjacent to an iconic cathedral and encircled by the Medieval walls of Dalt Vila, Ibiza’s old town, the restaurant is helmed by two-Michelin-starred Dutch chef, Edwin Vinke, whose unparalleled vision and dedication to cooking from the heart is palpable in every perfectly executed dish. Small wonder it’s been named in the Michelin Guide to Spain and Portugal for 2023.

The multi-sensorial experience begins in the bustling port of Ibiza town, where 1742 Ibiza guests are plucked from a designated meeting point, piled into a tiny, cute-as-a-button van and whisked skywards, snaking through the old town’s cobbled streets before alighting in front of the striking Ibiza fine dining restaurant. On arrival, guests are first guided the ground-floor wine cellar, where a selection of the world’s most spectacular wines are displayed (and vitally, available to sup), before ascending to the rooftop terrace, offering unparalleled views of the glittering city below.

Once seated, the real show begins, and diners can finally indulge in the first of Edwin’s show-stopping creations – six delectable appetisers designed to awaken the palate. From here, the 1742 Ibiza menu takes guests on a whistle-stop waltz for the senses, featuring faultless, delicious cuisine that centres on sustainability, authenticity and 0km produce. Edwin cooks with local ingredients harvested from nearby land and sea (in a custom-built kitchen that was especially shipped to the island, so it fits his precise requirements), and the results at the Ibiza fine dining restaurant are nothing short of breath-taking.

The contents of the 1742 Ibiza menu is kept under wraps – understandably, because part of the joy of dining at this incredible Ibiza fine dining restaurant are the surprises that lay around every corner – but diners can expect dishes like fresh and sweet shellfish imbued with spicy Thai flavours; local, island-caught fish, enlivened with herbs and artichoke; and succulent summer deer with pumpkin. The heavenly dessert swirls around the richness of dark chocolate, and every course is accompanied by a sommelier-suggested wine pairing. Service is immaculate, with staff taking the time to explain the origins and inspirations behind each dish.

Meanwhile, the palacio itself is erupting with activity. A violin player performs while meandering between tables; a staggeringly voiced opera singer threatens to crack glass with their otherworldly high notes; and the 1742 Ibiza dining room is awash with visual projections and a convivial communal atmosphere. The night has multiple endings before your driver whisks you back to reality: up on the stunning roof with a silky cocktail in hand; or in the VIP room slash mini-club that’s also available for private hire. But one thing is certain: Edwin Vinke has forged one hour and 40 minutes of truly fantastical culinary creativity that is one of the most unique Ibiza fine dining experiences on offer.
